German Mushroom Harvest 2025 Grows 1 % to 78,400 Tons

In 2025 German farms that cultivated edible mushrooms on at least 0.1 ha of land harvested a total of 78,400 tonnes. According to the Federal Statistical Office (Destatis), the overall yield rose by 1.0 % – 760 tonnes – compared with 2024. Over the decade 2015‑24 the 2025 harvest exceeded the ten‑year average by 4.4 % (3,280 tonnes).

The cultivated mushroom (Agaricus bisporus) remained by far the most important variety, accounting for 76,800 tonnes, or 97.9 % of the total. Its production increased 1.4 % from 2024 and was 4.6 % above the ten‑year average. The remaining 1,600 tonnes came from herbal and oyster mushrooms, shiitake, and other special cultures.

Organic farming produced 47.4 % – 37,200 tonnes – of the total, and champignons again dominated in these operations, making up 98.2 % (36,500 tonnes).

The total area devoted to edible mushroom cultivation reached 355 ha in 2025, 0.2 % larger than in 2024 and 4.2 % above the 2015‑24 average. Half of this land (50.1 %) was managed organically. The area used for champignons grew 0.2 % to 342 ha, 3.8 % above the decade average.

Lower Saxony and North‑Rhein‑Westphalia continued to be the leading states, with 200 ha and 80 ha of champignon cultivation area respectively.
